Gingerbread Loaf with Vanilla Glaze

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1/2 cup buttermilk

For the Glaze:

  • 1 cup powdered sugar
  • 1-2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. Cream Butter and Sugar: In a large bowl, beat the butter and brown sugar until fluffy. Add molasses and egg, mixing until combined.
  4. Combine Wet and Dry Ingredients: Gradually add the flour mixture to the wet ingredients, alternating with buttermilk, until just combined.
  5. Bake: Pour the batter into the loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool.
  6. Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over the cooled loaf before slicing and serving.
