Sweet Potato and Black Bean Chili: A Hearty Fall Favorite

This Sweet Potato and Black Bean Chili is perfect for cool fall evenings. It's comforting, filling, and can easily be made in a slow cooker for a no-fuss dinner. Plus, it's vegetarian, making it a great option for plant-based eaters.

Ingredients:

  • 2 sweet potatoes, peeled and diced
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 4 cups vegetable broth
  • Toppings: sour cream, cilantro, shredded cheese

Instructions:

  1. In a slow cooker, combine all ingredients. I always use my go-to

  2. Cook on low for 6-8 hours or high for 4 hours.

  3. Serve with your favorite toppings for a warming and satisfying meal.
