Maple-Glazed Pork Tenderloin with Roasted Apples

This tender pork tenderloin is coated with a flavorful maple-mustard glaze and roasted with slices of tart apples. Ingredients:

  • 1 lb pork tenderloin
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 2 tbsp Dijon mustard
  • 3 tbsp pure maple syrup
  • 2 apples, cored and sliced
  • 1 tbsp fresh thyme (optional)

Instructions:

  1. Preheat Oven: Preheat oven to 400°F (200°C).
  2. Season and Sear Pork: Season pork tenderloin with salt and pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until browned, about 5 minutes.
  3. Add Glaze and Apples: In a small bowl, whisk together Dijon mustard and maple syrup. Brush half the glaze over the pork. Arrange apple slices around the pork in the skillet, and sprinkle with fresh thyme.
  4. Roast: Transfer skillet to the oven and roast for 20-25 minutes, or until the pork reaches an internal temperature of 145°F. Halfway through roasting, brush the remaining glaze over the pork.
  5. Serve: Let the pork rest for 5 minutes before slicing. Serve with roasted apples.
