If you prefer your energy bites to be smoother and less chunky, you can use a food processor to mix everything before forming the balls. I opted for a more rustic texture, but either way, they’re delicious!

Ingredients:
- 1 cup rolled oats
- 1/2 cup mini chocolate chips
- 1/2 cup honey or maple syrup
- 1/2 cup nut butter (or sunflower seed butter for nut-free)
- 1/2 cup unsweetened shredded coconut
- 1/2 cup ground flaxseed (optional)
- 1/4 cup chia seeds (optional)

Instructions:
- In a large bowl, combine the rolled oats, mini chocolate chips, and shredded coconut.
- In a separate microwave-safe bowl, heat the honey (or maple syrup) and nut butter (or sunflower seed butter) until melted and smooth. Stir to combine.
- Pour the wet ingredients into the dry ingredients and mix well. (For a smoother texture, you can blend everything in a food processor before forming the balls.)
- If using, stir in the flaxseed, chia seeds, collagen protein powder, and dried cranberries.
- Roll the mixture into bite-sized balls and place them on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up before enjoying.
